Pear + Caramelized Onion Pizza

Ingredients:

1 recipe sourdough pizza crust, or your favorite pizza dough (remove from the oven 2 hours before using)

1 pear, thinly sliced

2 onions, thinly sliced

⅓ cup low-moisture mozzarella cheese

Olive oil

Salt and pepper, to taste
Method:

Preheat your oven to 550°F.

Heat a drizzle of olive oil in a pan over medium-high heat. Add the sliced onions and a large pinch of salt, stirring to coat in the oil. Add a splash of water and cover the pan for about 3 minutes to sweat the onions.

Remove the lid and stir the onions every few minutes until they caramelize. Add the pear and stir occasionally until the pears have softened.

Stretch the pizza dough into a thin circle with a slight border on your George Pizza Peel.

Scatter the mozzarella evenly over the dough.

Arrange the caramelized onions on top.

Transfer the dough from the peel to the preheated baking steel.

Bake for 4–8 minutes, until the crust is deep brown and charred.

Finish with a drizzle of olive oil and a sprinkle of flaky salt. Enjoy!
