Frequently Asked Questions

Are they heavy?

Yes, our baking steels are solid and durable, ranging from 18-23 lbs, but their weight is what helps retain and distribute heat so effectively. If maintained well, they can be conveniently stored in the oven, minimizing the need for lifting and making them easy to use whenever you need them.

Can I make meats on the baking steel?

We do not recommend it in the oven as the baking steel is essentially a pizza oven replacement that’s perfect for making pizza and breads. The additional oil and fat in meat may drip off of the steel causing excessive smokiness.

We do recommend using the steel on an outdoor grill for searing meats and vegetables!

Can I make cookies on the baking steel?

Yes– however, cookies don’t require the amount of heat that a baking steel conducts and absorbs, so the cookies will not bake any differently than they would on a baking sheet.

However, the steel creates an even heat throughout your oven, Place your cookie sheet on top of the steel in a preheated oven and they will brown evenly!

How is a baking steel different than a pizza stone or baking sheet?

Baking steels hold nearly 16x more heat than a pizza stone (and much more than a baking sheet), resulting in that perfect, “wood-fired” crisp and texture.

How is the George Baking Steel different from a regular baking steel?

George Baking Steels are thicker than most steels on the market (ours is 3/8" thick while others tend to be about 1/4" thick) resulting in a much crispier pizza or bread! Plus ours has two handles and comes in the most beautiful blue box!

Will carbon steel rust?

Yes, like all high-quality carbon steel, our baking steel can rust if not properly cared for. However, with regular maintenance—such as keeping it dry, lightly oiling it after cleaning, and storing it in a dry place—you can easily prevent rust. If rust does appear, it can be removed with a scrubber and re-seasoned in the oven to restore its performance.

What are some other products you hope to sell?

So many! Cutting boards, stovetop griddles, pans, etc.

Do I need to get a pizza peel?

We highly recommend it for easy transfer in and out of the oven! If you don’t have one, you will need to use parchment paper to transfer your pizza and breads.

How hot can carbon steel go?

Carbon steel can withstand extremely high temperatures—up to 2,500°F (1371°C) before it begins to soften or degrade. In a home oven, it will typically reach 500–600°F (260–315°C), and it can handle even higher temperatures on a grill, broiler, or open flame without damage.
