Care and Cleaning
Baking Steels
Before Use:
- Wipe with a dry paper towel to remove any dirt or debris left over from the shipping process.
How to use:
- Preheat your oven to 500-550°F and allow the baking steel to heat for 45 minutes.
- While your steel is heating, prepare your desired toppings.
- Shape the pizza dough and arrange the toppings accordingly.
- Use a pizza peel to transfer the pizza directly onto the preheated baking steel.
- Bake the pizza for about 9 minutes, monitoring closely to avoid overbaking, as this may result in a tough crust.
- (Optional) For additional browning, use a broiler or a kitchen torch.
- Once the pizza is baked, carefully remove it from the oven and place it onto a cutting board.
- Complete the pizza by adding any final touches of oil or toppings, then serve and enjoy.
After Use
- Allow your baking steel to cool completely before cleaning.
- If there’s little residue, simply wipe it clean with a paper towel, and that’s it.
- For tougher bits, scrape off food residue using a bench scraper or chainmail scrubber.
- Wipe with a damp cloth—avoid soap to preserve seasoning.
- Dry completely to prevent rust.
Deep Cleaning (When Needed)
- Use warm water and a stiff brush or chainmail scrubber to remove stubborn bits.
- Dry immediately to prevent rust—never soak or air-dry.
- For extra drying, place in a warm oven for a few minutes.
Seasoning & Maintenance (When needed, for rusting)
- Apply a thin layer of high smoke point oil after cleaning to maintain seasoning.
- Place the steel in a 450°F oven for one hour to bond the oil to the surface.
- Let cool completely before storing, (if not storing in the oven).
Griddle
Before First Use
Your griddle arrives pre-seasoned and ready to cook. Before first use, wipe the surface with a dry paper towel to remove any dust or debris from shipping.
After Each Use
Allow the griddle to cool slightly before cleaning.
- Scrape away any food residue using a bench scraper or metal spatula.
- For stubborn, burnt-on food, use a chainmail scrubber or stiff brush.
- Wipe clean with a damp cloth if needed.
- Dry immediately and thoroughly to prevent rust.
Important Care Notes
Your carbon steel griddle should be cared for similarly to a cast iron pan.
- Do not soak in water.
- Do not leave wet or allow to air-dry.
- Avoid prolonged exposure to moisture, which can cause rust.
- Regular use will continue to build and strengthen the natural seasoning.
Seasoning & Maintenance
After cleaning and drying:
- Apply a very thin layer of a high smoke point oil across the cooking surface.
- Wipe away any excess oil with a paper towel.
- Store in a dry place or on your stovetop.
If rust develops, remove it with a scrubber, dry thoroughly, and re-season the griddle before use.
With proper care, your Stovetop Griddle will develop a naturally nonstick cooking surface and provide years of reliable cooking performance.
