Elote Pizza

Ingredients:
- 1 recipe sourdough pizza dough, or your favorite pizza dough
- Bowl of flour, unmeasured
- 1/2 cup cotija cheese
- 1/4 cup mayo
- 1/4 cup sour cream
- 1/4 cup cilantro
- 1/2 tsp chile powder
- 1 garlic clove
- 4 ears of corn
Method:
- Preheat your oven with a George Baking Steel at 550 degrees. Remove your pizza dough from the fridge at least 2 hours before cooking.
- Heat a cast iron pan to high heat. Place the corn in the pan and cook until it is charred on all sides.
- Remove from the pan and cut the kernels off the corn.
- Combine the cotija, mayo, sour cream, cilantro, chile powder, and garlic. Add the corn kernels and combine.
- Place the dough into the bowl of flour and ensure all of the dough is covered. Shake off any excess. Flour your George Pizza Peel and dust off any excess.
- Stretch the dough out into a thin circle with a slight border. Place a few ice cubes onto the center of the dough and onto the Baking Steel. Cook at 550 for 4–8 minutes, or until dark brown and charred.
- Remove from the oven and top with the elote corn. Finish with more cotija cheese and chile powder!
