Steak Chimichurri Flatbread

Ingredients:
For the Chimichurri:
- 1 bunch parsley, very finely chopped
- 1/3 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp red pepper flakes
- salt and pepper to taste
Other toppings:
- 4 oz Feta
- 4 oz flank steak (or steak of choice)
- Arugula
Method:
- Preheat your oven with a George Baking Steel at 550 degrees for at least 30 minutes. Remove your pizza dough from the fridge at least 2 hours before cooking.
- Season your steak very well with salt.
- Combine the chimichurri ingredients.
- Sear the steak over medium high heat until a nice golden brown crust forms, about 5 minutes per side.
- Shape your pizza dough into a flatbread shape on your floured George Pizza Peel. Transfer it to your George Baking Steel and add ice cubes for steam. Close the oven door and immediately turn the oven to broil.
- Cook for about 5 minutes, or until the crust is deep golden brown and charred spots have formed.
- Add the feta, arugula, steak, and chimichurri.
- Finish with more olive oil, salt, and pepper and enjoy!
